Fresh Albacore Tuna is a species of tuna found in deep waters. This species has many other names including Pacific albacore, tombo ahi, albacore fish, and albacore tuna. Albacore tuna are pelagic predators meaning that they are found neither close to the bottom nor near the seashore and are open-sea hunters. The size of the albacore is approximately 90 to 100 centimeters. Its weight is up to about 40 kilograms. This tuna species is dark blue dorsally. It has shades of silvery white ventrally. The first dorsal fin is a deep yellow. The second dorsal fin and the anal fin are light yellow.
Albacore tuna is the only tuna type that is branded as white meat tuna in the United States. One is able to find it in the open waters of all tropical and temperate oceans, the Mediterranean Sea, Hawaii, Fiji, and the South Pacific. It has a moderate to rich flavor and a firm texture. It is also known as “The Chicken of The Sea” because of its delicate aroma. Albacore is a prized food, and the albacore fishery is economically significant. It is suitable for many different preparations. As raw fish, it is softer than the other tunas and is, therefore, more difficult to prepare as sashimi.
